Tahini Roasted Cauliflower [Vegan]

Let’s face it — sometimes side dishes are just better! This dish is so delicious & eye-catching, it can easily be the centerpiece of any dinner table instead of being part of the supporting cast. I love how a little color, a little fat and a little heat can completely transform a vegetable. Roasting this cauliflower gives it a crisp texture with the tart and toasty flavors of tahini and pomegranate seeds. And if cauliflower isn’t your thing, try substituting Brussels sprouts, sweet potatoes, squash or broccoli.
