Many of our Friends love 'salads as entrees' as much as I do. They are especially healthy for Diabetic diets. This one is a Greek spice rubbed chicken breast with white balsamic quinoa salad that has yellow bell pepper, red onion, cucumber, fresh basil, garlic and olive oil in it.
