Made Today ¦ Thyme rubbed lamb chops

In the pan today, 1.5" thick lamb loin chops rubbed with fresh thyme, garlic, salt, pepper and olive oil. I seared them on high heat to get a great caramelized crust, only to rare, and put them with a Spanish wine and gorgonzola glaze.
