There's nothing like guacamole made from scratch, with tasty, ripe avocados. Now is the perfect time of year to be eating avocados. It's hot. They're ripe, and you are probably trying to stay healthy. Use this fresh, easy guacamole recipe to get the most out of seasonal, ripe avocados and use it as a dip for tortilla chips or a spread on a Mexican spice rubbed chicken sandwich. Here's the recipe. Ingredients
  • 2 large ripe avocados, diced
  • 1 ripe medium, seeded and small chopped tomato
  • 1 spicy jalapeno, seeded and finely diced
  • 1/4 cup red onion, finely diced
  • 2 medium cloves fresh garlic, finely diced
  • 1/4 cup cilantro, chopped
  • juice of 1 ripe lime
  • 2 tablespoons sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
Process Simply mix all the ingredients in a bowl until the avocado starts to get somewhat creamy. You may want to adjust the salt, lime, or jalapeno level to your own taste. Tips Ripe avocados are the key to great guacamole. Look for avocados that are soft, but not mushy. The skin should be dark green and brownish, not bright green. Identify ripe tomatoes by feeling for a thin skin. Cut out the stem and slice in halve horizontally to expose all the seeds to easily seed them. Ripe, juicy limes can be identified by looking for a smooth skin that also feels thin. Color is not important. For spicy jalapenos, look for skins that have ripened to a dark green with some black color. If you can't find jalapenos with black areas on the skin, buy several jalapenos so you can be sure to get at least one that is spicy. You may also want to pick up a serrano pepper too, just in case. Serranos are around 10 times hotter than jalapenos normally. For even better flavor, toast and grind whole cumin seeds just before preparing. This recipe uses lime juice and sour cream to help keep this guacamole from turning brown quickly, in addition to enhancing the flavor and mouth feel. To keep it green even longer, press plastic wrap down on top of the guacamole to protect if from the air. Leaving the pit in guacamole does absolutely nothing to preserve the color.
